Cooking classes huh......

Well you would like cooking classes, well ..... I would love too, Price list. $45- hr. w/o food. $80.- w/food...LOL
thats what I tell most people, and I dont clean up after myself....hehehe Ok Barter is good, shiny quarters...well..... ok if it is SUPER shiny though.
Resipies of cource, I will post my evening special nightly, I need to keep track of this stuff anyway. This would be a great place to keep that list. Last nights follows

Pesto encrusted Coho Salmon atop a bed of sundried tomato fettuccini in a light cream sauce w/veggies

PESTO crust
2 C Pesto
1 C panko - Jap style bread crumbs
1/2 c shredded parmesan
1 TBS Garlic
1/4 C Olive Oil
Blend with prossesor till blended and smooth. Then fold in the Parmesan store in a lidded container
Spoon mixture on top of salmon and bake in a 400' oven till M.R. and Pesto has lightly browned (IT WONT BE AN EVEN BROWNING)

Sundried tomato paist for sauce.

1 C Sundried tomatoes
1/2 C Pan roasted Pine nuts
1 C Parmesan shredded
1/4 C Olive oil
Blend with prossesor leaveing Tomatoes a bit lumppy (YOU WANT TO SEE THEM)store in lidded container

In sautee pan heat olive oil, add broccoli, enough to your likeing. Add wild mushrooms, rough chop, Scallions, 1/8" chop. Let cook till tender add chopped garlic and stir. Let garlic cook till it lightly browns. Deglaze with a bit of wine. White, Chard. or Pino giss would be my pick but a Chablis would work also. Add SDT mix about 1 1/2 TBS and stir, once incorporated add 1/4 - 1/2 C HVY cream. stiring constantly to heat it evenly and distribute the Parmesan (THIS WILL HELP THICKEN YOUR SAUCE) Add your cooked pasta now. Be creative with the pasta, Basil, SDT, Garlic nomatter the kind aslong as it is fresh and al'dente'.Toss gently and set aside. for the moment so keep it warm.
Pull out the Salmon and check it to make sure you didnt over cook it or still have Sushi. Now on the Plate; twist the pasta so that the sauce and the veggies are seperated from the pasta.
lay the pasta on the plate. Put your salmon on this pile (kinda leaning on it) and place the veggies around it. Pour the sauce atop the veggies and garnish with lots of parmesan cheese around the plate not on the salmon. And a couple of Chive shoots. Done. Pretty simple huh, Just dont over cook things and it comes out F'in grub
I would like to try this one out on a whole salmon sometime and serve it family style. BIG PLATER BIG..... Well sounds good to me...hehehe
